Brazilian yerba mate with orange and berry, not a tea leaf at all. Mate carries a moderate, notably even lift: less spike than coffee, longer than black tea. South America drinks it socially for exactly that reason.

Good in the morning, as a substitute for a second coffee. Excellent iced with orange. Pairs with breakfast food and anything citrus. Plain is best.

Heat fresh water to 80°C, mate goes harsh and bitter with boiling water. Use 1 to 2 teaspoons of loose leaf per cup, steep 5 to 7 minutes. The leaf takes a second infusion well.
